Portland’s own Salt & Straw opened its doors in Pacific Heights at 2201 Fillmore. The cult ice cream shop bared an incredible line that out beat Boba Guys in pinch. I scream for ice cream.

Owners Kim and Tyler Malek have rapidly expanded their business since it began in 2011, opening three locations in Portland and four in Los Angeles. The secret to their success has been both the quality of their ice cream and the originality of their flavors, which push the boundaries of ice cream propriety with culinary and often savory combinations like Pear & Blue Cheese (not currently on the SF menu), and their now annual stunt creating flavors inspired by the Thanksgiving table, including Salted Caramel Thanksgiving Turkey.

Their limited edition, seasonal flavors here include a Green Apple Mayo Sherbet made with apple juice from the Sierra Nevada foothills, apple cider vinegar from Sonoma, and Berkeley olive oil; Cascara Shrub with Candied Hibiscus, which is made with a coffee bean and apple cider vinegar shrub made in Berkeley; and Caramelized Almond S’Mores, made with Annie’s graham crackers.

Designer ice cream is no secret in SF and some of today’s hottest creamery’s (Smitten, Bi-Rite, Three Twins) are starting to take flight like no other so what better way but to welcome a whole new pitcher to the team. Portland’s cult ice cream shop Salt and Straw will be popping up in the Bay early December with hopes to be in our turf as soon as 2017.

One could compare this PDX home classic to the long lines of Bi-Rite, luring in massive crowds for a taste of their rich flavors. They’ve recently expanded with four locations in Los Angeles, and up next, as Eater reports, will be two shops in San Francisco, beginning with one in Pacific Heights at 2201 Fillmore Street, coming in spring 2017. Sooner than that, next week, Salt & Straw will be doing a pop-up here, though it looks like the location has yet to be revealed.

Opening at a later date, Salt & Straw will open their Hayes Valley location, in a new building at Hayes and Laguna, per the Chronicle. In other words: Bi-Rite and Humphry Slocombe, watch out. Kim Malek tells the Chronicle it didn’t take long to settle on the Fillmore Street location, formerly home to Evolution Fresh juice bar. “This building just felt like the epitome of that idea of a community gathering place. We knew it right when we saw it,” she says.

So why is this particular ice cream brand being talked about? Well, their flavors. It first made Buzzfeed news when the creamery debuted it’s Thanksgiving collection which consisted of Salted Caramel Roast Turkey, Buttered Mashed Potatoes and Gravy, Sweet Potato Casserole with Maple Pecans, and Cranberry Walnut Stuffing. THANKSGIVING IN ICE CREAM FORM. HOW COULD YOU NOT?

Of course, they keep a very charitable angle with all their opens, their San Francisco shops profits will be made into donations to local schools. How much you may ask? That info hasn’t been released just yet, but by way of repetition in their hometown of Portland, it could be a lot.

Now tell us if this picture below doesn’t make you salivate… It made us pretty quick.
