With a death comes rebirth.
The former AQ space is getting it’s wings back with the newest installment, Birdsong. The former location of AQ, which shuttered early this year will open it’s doors again to the Pacific Northwest, Birdsong, headed up by executive chef and owner Chris Bleidorn, who was previously at Saison, Atelier Crenn, Benu and Alinea.
A full menu has not yet been announced, but the team behind Birdsong intends to incorporate wild game found in the Pacific Northwest, including elk, buffalo, and boar. Other key ingredients will include cold-water shellfish, mushrooms, and berries.
But keeping in the Northwest theme, food from Washington, drinks from Oregon, and flavors from British Columbia will be in full attendance. Birdsong is targeting a winter opening on Mission Street. Bleidorn is interested in preserving techniques of his training, such as smoking and dry-aging meat, fermentation, and cooking with open fire, all with a modern twist. Guests will be able to see these cooking techniques at Birdsong’s open kitchen, with 10 seats lining the chef’s counter.
