The jack-o-lanterns stare back at you, their stupid, mocking, laughing look underlining the fact that you may have to waste them. Would you trash them or is there something else you can use them for? Well, sit back and discover this new Halloween special dinner because you’re going to bed with more than a belly full of candy.

Pumpkin Chipotle Pasta Sauce

Pumpkin Chipotle is a smoky, mildly spicy, creamy sauce; a delish mix of Pumpkin Puree and Chipotle. 

While you can make the Puree by yourself, you’ll need to get the Chipotle Sauce from the store. 

As this recipe only makes a little more than three servings, you can choose to serve it with a big bowl of fruit salad, adding to the color of the event. For meat, a lot of people have said they instantly fell in love with browned Italian Sausage. 

To get the best taste, brown the chopped sausage alongside the onion and garlic, then continue with the recipe.

If you’re not a huge fan of tomatoes, you can just slip in pumpkin puree and get an experience that will make your taste buds tingle for a long time.

Pumpkin Chipotle Pasta Sauce

Total preparation time: 30 minutes

Preparation time: 10 minutes

Servings: A little more than three

Ingredients: 

  • 1 yellow onion 
  • 1 Tbsp olive oil 
  • 2 cloves of garlic
  • 2 tablespoonfuls of Unsalted butter
  • ½ teaspoon of chipotle powder 
  • 1 15oz. can pumpkin purée 
  • 1.5 cups chicken broth* 
  • ½ tablespoonful kosher salt 
  • Freshly cracked pepper 
  • ¼ cup grated Parmesan cheese
  • ¼ cup Dried sage
  • ¼ cup black pepper (if you prefer spicier food)
  • ¼ cup heavy cream
  • ¼ cup Ceme Fraiche or Sour cream
  • 8 ounces bucatini pasta (or any pasta of your choice)
  • 4 links of chicken sausage sliced (or Italian sausage)
  • 1 tablespoon pure maple syrup or honey
  • ½ teaspoon cumin

Recipe

  1. Prepare a medium-sized heavy saucepan over medium heat. Let the pan heat up for a minute before melting the butter and adding the olive oil.
  1. Add chopped onion, chicken sausage (or Italian sausage), and minced garlic. Spread the sizzling mix with your spatula. Sauté until the garlic, sausage, and onions are brown and tender. This process takes four or five minutes.
  1. Add puréed pumpkin, chicken broth, dry sherry, cumin, dried sage, chipotle powder, black pepper, grated parmesan cheese, freshly cracked pepper, and kosher salt.
  1. Stir.
  1. Bring to a low boil, then reduce to low heat and continue to cook for another 20 minutes. Occasionally stir.
  1. Mix the heavy cream and Sour cream (or Crème Fraiche if Sour cream is not available) in a mixing bowl.
  1. Add the mixture to the low boiling mixture in the shallow pan.
  1. Blend with an immersion blender (stick blender) until smooth. If you don’t have a stick blender, you can mix or puree with a regular blender. Make sure the mixture isn’t watery. Make it puree-like.
  1. Pour onto hot prepared pasta
  1. Dribble pure maple syrup or honey at the side of each dish or on the browned sausages. This would give you a pleasant balance of sweet and spicy.

How Do You Store Leftovers With Leftovers?

If you have leftover Chipotle puree, you can store it by sealing in an air-tight container and placing it in the fridge. Make sure the mixture cools before covering.

You don’t want to put a hot mixture in the fridge because you can decrease your fridge’s lifespan.

Are you eyeing the freezer? Not a great choice if you want to keep your puree tasteful.

You want to avoid putting the mixture into the freezer because freezing changes the consistency of the puree by diluting it with water (from the ice). This would make the sauce lose taste- and you don’t want that.
