Preparation Process Of Chocolate Prosecco

Step 1
- The dark and milk chocolate needs to be chopped finely.
- Add the unsalted butter to a saucepan on light heat.
- Once the butter is melted, add the double cream to the saucepan.
- Place the chopped chocolate into a large bowl over a pot of boiling water.
- Slowly pour the double cream mix into the bowl of chocolate constantly stirring the mix until fully homogenized.
- Slowly add in the Prosecco and stir until homogenized.
- The mixture should be covered with plastic wrap and left to chill for 4 hours or 24 hours.
Step 2
- Take out the baking pans and cover them with tin foil.
- The chilled bowl should be poured into a piper and pipped onto the tray into the shape of small balls. 25 balls on a tray.
- The tray should be frozen for an hour or as long as you would like.
- The 150g milk chocolate should be placed into a heatproof bowl and heated in the microwave until melted or you can add the chocolate into a bowl over a pot of hot water and stir until melted.
- Remove the truffles from the freezer and dip them into the mix of melted chocolate onto a separate tray covered in baking paper.
- The coated truffles should be left to chill for 10 minutes.
Step 3
- After the truffles are chilled on a plate sprinkle the sugar on top.
