Don Julio Gonzalez-Frausto Estrada was born on 7 January 1925 in Atotonilco, Jalisco, dealt a cruel blow of losing his father at the early age of 15, exposing him to the harsh realities of becoming a man at a time his mates were probably frolicking in mischief. Steps of Tequila preparation: 

Harvest the agave; by cutting from the leaf’s base up to the apex, dismember the leaves around the centre until you reach the centre of the plant where the long bulb-like part is to be located and severed with the coa de Jima. 

Next is the agave core, or the piña baked through a total cooking time of approximately 16 hours plus warming and cooling times to ensure the piña does not over nor under cooked. 

Then you may proceed to shred the piña to extract the agave juice then ferment it before barrelling the juice in oak casks to age the tequila.
