From the Cattle Trail to the Cuisine of Texas Tradition

  • The name Saltgrass comes from the tall, perennially green bunchy type of grass found inland to the gulf coast an area extending from Brownsville to Orange. When the men in Texas returned after the civil war, they wanted to capitalize on the growing market of the beef industry through their cattle. 
  • These cowboys found that the cattle who used to drift during winter towards the saltgrass area for fodder grew fatter and healthier. As those were the days of the open ranch, these herdsmen started steering their cattle toward the saltgrass area and then camping there from November to February and returning with the cattle to their homes.
  • The trail of thousands which included cattle, horses, men, wagons, etc, winding their way towards and back led to the legendary Saltgrass Trail of Texas. It became well known in the LoneStar State for the best beef. Later research proved that the saltgrass was rich in minerals and quite beneficial to the cattle.
  • In 1952, Reese Lockett, Pat Flaherty, E.H. Marks, and John Warnasch recreated the trail on a televised drive riding on a traditional chuck wagon and horses. Since then it has become an annual event that usually coincides with the Houston Livestock Show and Houston Rodeo. The trail currently partly lies along the US 290 highway.
  • A decade into reviving the Saltgrass trail, the zeal to recreate another Texan legend led to the opening of the first Saltgrass Steak House along the famous and original saltgrass trail in 1991.

 More than 30 years later, even today the original Saltgrass Steak House flourishes along the famous trail while other branches across the state and country have also lived up to its consistency in Texas-style steak cuisine and traditional decorative settings.
