Chef Cosme Aguilar begins this restaurant in Mexico. His hometown is Chiapas, where he got inspired by his mother’s passion for cooking and started to learn traditional dishes of Chiapas with his sister and aunt. He begins working in french restaurants. But he carries memories of the flavours of his childhood. These memories of flavours later become, his inspiration and started cooking Chiapas meals.
